What do you need:

  • 1 1/4 roast beef

  • 3 carrots, chopped

  • 3 celery stalks, chopped

  • 1 bay leaf

  • 1 can of chopped stewed tomatoes

  • 4 cubes of beef broth

  • 4 cups of water

  • 2 cups frozen mixed vegetables

  • 1/2 cup of barley

  • 2 tablespoons oil

  • 1 tablespoon of white sugar

  • 1/4 teaspoon ground black pepper, plus more to taste

  • Salt to taste

Cook the chuck roast in a slow cooker for 4-5 hours on high, adding bay leaves and barley for the last hour. When the meat is done and tender, cut it into small pieces. Remove the bay leaf and reserve the meat, broth and barley. In a large pot over medium high heat, heat the oil, then cook the carrots, celery, onion, and mixed greens until tender. Add tomatoes, beef bouillon cubes, water, sugar, 1/4 black pepper, and meat mixture. Bring to a boil, lower the heat and simmer for 15 to 20 minutes. Season with salt and black pepper if necessary.
